Vegan meals are becoming increasingly popular

The combination of health considerations, environmental and ethical concerns, increased vegan recipes at social media and cultural acceptance has contributed to the growing popularity of vegan meals. As more people recognize the benefits and embrace plant-based eating, the popularity of veganism is expected to continue to rise. Scientific research has shown that plant-based meals can provide numerous health benefits. Several studies have found that plant-based diets, when well-planned, can help lower the risk of chronic conditions such as heart disease, high blood pressure, type 2 diabetes and certain types of cancer. This is primarily attributed to the abundance of fiber, antioxidants, vitamins and minerals found in plant-based foods. Plant-based diets, particularly those low in saturated fats and cholesterol, have been associated with lower levels of LDL (bad) cholesterol and reduced risk of cardiovascular disease. High intakes of fruits, vegetables, whole grains, legumes and nuts, which are common in plant-based diets, have been linked to improved heart health markers. Vegan meals tend to be lower in calorie density and higher in fiber, which can promote satiety and help with weight management. 

Health benefits of vegan food

Studies have shown that individuals following plant-based diets, particularly those focused on whole, minimally processed foods, tend to have lower body mass index (BMI) and reduced risk of obesity. Moreover, plant-based meals, especially those rich in whole grains, high fiber content, legumes, fruits and vegetables, can help improve blood sugar control and insulin sensitivity, and also healthy digestion. The fiber in plant foods acts as a prebiotic, supporting the growth of beneficial gut bacteria. We asked some of PureandCure's health and wellbeing resorts their favorite and most popular vegan meals, which we listed below:

  • Stir-fried vegetables with tofu and brown rice: This dish typically includes a variety of colorful vegetables like bell peppers, broccoli, carrots and mushrooms, stir-fried with tofu and served over a bed of nutritious brown rice.
  • Lentil curry with quinoa: A hearty and flavorful dish made with lentils, spices, and coconut milk, served alongside quinoa, which is a protein-rich grain.
  • Chickpea salad wrap: A refreshing and filling wrap filled with seasoned chickpeas, crisp vegetables like lettuce, tomatoes, and cucumbers, and a tangy dressing, all wrapped in a whole-grain tortilla.
  • Vegan sushi rolls: Sushi rolls made with avocado, cucumber, carrots, and other vegetables, wrapped in seaweed and sushi rice. These can be customized with different fillings and sauces.
  • Sweet potato and black bean chili: A comforting and satisfying chili made with sweet potatoes, black beans, tomatoes, onions, and spices. It can be served with cornbread or brown rice.
  • Vegetable stir-fry with noodles: A quick and easy stir-fry made with a variety of colorful vegetables such as bok choy, bell peppers, snow peas, and carrots, tossed with noodles and a flavorful sauce.
